
On the occasion of the celebration of the Prune Festival, the winery located in Atlántida introduced its new product Catarsis: a blend of Cabernet Sauvignon (70%) and Tannat (30%) harvested in May, 2007.
The vineyards of Viñedo de los Vientos are permanently driven by gentle marine breezes from the ecstuary of the River Plate (Rio de la Plata) what guarantees the full sanity of its vines. The clayish soil, and the yield of 8000 kilograms per hectare, render grapes of excellent characteristics from this vineyard.
The temperature span between day and night in this region is another factor that exerts substantial influence in the development and growth of the fruits. During the day there can be peaks of until 42° C while the same nights might fall to 15° C.
The grapes are harvested by hand in plastic containers of 15 kilograms each, then they are carried to the belt where the best grains are selected. From there they go to the press and afterwards directly to stainless steel tanks for the beginning of the ellaboration process.
Catarsis was macerated in those tanks during 5 days at 6°C and then fermented for 7 days at 26°C until it reached an alcoholic level of 13°, and then barrelled in French oak casks for ageing during 18 months.
The target public for this wine are foreign markets, mainly from North America. This new Reserve is introduced with the following slogan: "Catarsis is an experience or a relief and spiritual purification feeling provoking an intense and exciting experience. Relax and do your Catarsis with our bliend of 70% Cabernet Sauvignon and 30% Tannat, ellaborated by the hands of our winemaker under his most secret tecniques. This wine was aged for 18 months in French oak barrels."
