Viña Varela Zarranz introduced its natural sparkling wine Varela Zarranz Brut Nature
The winery, which since 2007 has participated in the market of sparkling wines with the well known María Zarranz launches a limited edition of 1326 numbered bottles of this new product. A unique gift for the approaching Christmas season.

In a totally different style to their already famous María Zarranz, Viña Varela Zarranz produced this natural sparkling wine by the champenoise method, from a coupage blanc de blanc composed of Chardonnay and Viognier. The second fermentation gave way to an aging on lees for 24 months.

The process begins with the harvest of the grapes, very early because the Chardonnay and Viognier are early harvest varieties, which is also necessary to have a good acidity that will contribute to the freshness of the sparkling wine. The base wines are obtained by the process of vinification of white wine, before proceeding to the blending or coupageof the base wine, which in this product is 50% Chardonnay and 50% Viognier.

Then follows the tirage : After the wines are blended, special yeasts and sugar are added, and the cuvée is immediately bottled and capped. In this way develops the second alcoholic fermentation in the bottle in a cool temperature remaining around 12 º C, thus obtaining the fine and abundant sparkles that Viña Varela Zarranz Brut Nature presents.

During a long time -24 months- the bottles lie while undergoing their "aging on the lees", which gives it a fine bouquet and cremosity.

Convinced that the maturation time was enough to acquire the desired characteristics, it is necessary to separate the lees of wine for good clarity. To this end, racks or pupitres are used where remuage is performed. The bottle is then riddled so that the lees settles in the neck of the wine bottle. After riddling comes disgorging (or dégorgement), whereby the sediment is removed.

Tasting Notes
Pale and bright yellow colour with golden flashes. Presents an outstanding perlage of abundant and persistent fine sparkles. With crown formation on the surface.
In the nose it has a delicate and discreet bouquet, with notes of toasted bread on a bed of confit fruit. In mouth it is nice, creamy and with a dry finish.
